I scooped up Mops about 3 years ago near my friends house in a neighborhood park area and set up posters everywhere for her owners to find her. About two weeks later, surprise! They called! Stating at first that they wanted her back but also lamenting about her apparently being a horrible biting dog that had bitten their pet turtle or something of that nature. Once the phone call concluded, they stated they actually no longer wanted her and that we should just keep her, and of course we did! No idea what breed of dog she is though? Original owners apparently got her from a dog shelter/pound.

I believe she's fairly young. Her teeth and gums are in great condition and she has very young/puppy like tendencies and kind of bounds around like a bunny rabbit
Context: I would love to adopt a dog, but have never had one. I want to just clarify how much time I will need to give one a good life so I can plan for it. Detailed responses welcome, especially concerning whether I will need more time when it is a pup etc.
Bonus question: to what extent is it acceptable to leave a dog alone whilst working?

I got a dog my first dog a month ago, she is a Brittany about a year old. She is a very well behaved dog but she has a huge problem with cats when we are on a walk. In the town I live there are a lot of stray cats and it is a huge problem. We may be having the best walk ever with her not pulling at all and then a cat pops in the side of the road and she goes crazy running on it even crying because she can't get it and getting her away from it is even worse because she just freezes looking at the cat. After that she is very tense and starts pulling and doing everything she isn't supposed to for a long time supposing we don't see another cat in the way. It's my biggest problem and I need to address it in some way so I can start enjoying walking her without seeing walks like a chore.
Edit: she also doesn't just lounge at a cat she does the whole thing like she is hunting without any barking, growling or any swift moves and only starts running when she is closer. We assume that she was being trained to hunt hare and birds.
